XANTHAN GUM

                                                                 XANTHAN GUM Xantham gum is a polysaccharide produced by certain species of bacteria. It is produced b pure fermentation of glucose using the bacterium named as Xanthomonascompestris, which is no toxic and non pathogenic to human beings. The high molecular weight (> 10000000) polysaccharide produced in culture broth is isolated by using isopropyl alcohol, which is dried and milled to give commercial Xanthan gum.
