sea weed called Carrageen; or Irish moss, the redalgae obtained from
ChondrusCrispus (Rhodophyceae)

These red algae grow on the North Atlantic
coast of Europe and North America.
France, Spain, Denmark and the USA are the major producers of
carrageenan in the world market.
Method of Preparation
Carrageenan is found in the intercellular
matrix and cell wall of the algae and constitutes about 60 - 80 per cent of dry
weight.
The dried seaweed is first cleaned with cold
water and mechanical devices so as to remove salt and other extraneous matter.
It is further extracted with hot water containing sodium hydroxide or calcium
hydroxide and by adjusting the pH to slightly alkaline range. The extract is
obtained by filtration and the purity of the product is attained by
precipitation with isopropyl alcohol or ethyl alcohol.
Uses

Carrageenan is used as
emulsifying agent, stabilizing agent, gelling, and viscosity builder in foodproducts. Tooth
pastes, Creams, lotions and other Cosmetic products are prepared by using
Carrageenan.
2.
In food industry, it is utilised in milk products, ice creams, chocolate,
puddings, jams, gels in the concentration of 0.5 - 1.0 per cent.
