CHITIN AND CHITOSAN
It is the polysaccharide derivative
Containing amino and acetyl groups and is the most abundant organic constituent
in the skeletal material of the invertebrates. It is found in mollusks,
annelids, arthropods and also, as a Constituent of the mycelia and spores of
many fungi.
During the canning of lobster, Crab and
shrimp, substantial quantities of crustacean waste material is formed. The
waste mainly consists of shells and heads. Hard crustacean Sheila contain 15 -
20 per cent chitin while soft shells of shrimp are reported to have 15 - 30 per
cent of chitin, Mycelia of Penicillium species contain about 20 per cent of
chitin. miesticsindiDeacetylated chitin is known as chitosan.
Uses
1.
Due to Cross linkages between glucose molecules in chitin, it is
indigestible to humans like cellulose.
2.
Therapeutically, it is used
in wound healing preparations.
3.
Chitin is used as a sizing agent or rayon, Cotton, wool and even
for synthetic fibres.
